Dosa Kitchen is the culinary collaboration of Nash Patel, who grew up in Hyderabad, India, with the irresistible aroma of fresh dosas in the air, and Leda Scheintaub, a New York-based cookbook author with a passion for global flavors. Together, they launched Dosa Kitchen in the United States, bringing small-batch, traditionally fermented dosa batter to a growing community of food lovers seeking authentic South Indian taste with modern ease.

What started as a food truck in Vermont quickly became a celebrated brand — featured in major publications and known for combining cultural integrity with convenience and quality.

In 2025, Dosa Kitchen proudly expanded to India, led by Pooja Shah, our partner based in Hyderabad — the very city where Nash’s dosa journey began. With her entrepreneurial expertise and deep local insight, Pooja brings the same commitment to quality, tradition, and innovation that defines Dosa Kitchen globally.

Today, Dosa Kitchen serves both retail and B2B markets, offering millet- and lentil-based dosa batters that are clean-label, ready-to-use, and rooted in tradition — no preservatives, no shortcuts, just pure flavor and fermentation.
